MINT

Iced Mint Green Tea

Ingredients:

  • 1/2 cup fresh mint leaves
  • 4 cups of brewed green tea
  • 2 Tbsp honey
  • 4 stalks lemon grass for garnish

Preparation:

Combine mint leaves, tea and honey. Refrigerate until chilled. Serve in ice filled glasses. Garnish with a stalk of lemon grass.

GINGER

Iced Green Tea Punch

Ingredients:

  • 12 cups freshly brewed green tea
  • 1/4 cup sugar
  • 3 inches fresh ginger, peeled and thinly sliced
  • An array of sliced fruits such as strawberries, oranges, limes and cucumber
  • Ice cubes

Preparation:

  1. In a large saucepan combine the green tea, sugar, and ginger. Bring to the boil, then reduce the heat and simmer for 5 minutes.
  2. Remove from heat and strain the ginger  from tea. Transfer tea to a jug or punch bowl. Cover and chill for one hour.
  3. Add in the sliced fruits of your choice
  4. Serve tea in ice filled glasses.

Green Tea Mojito

Ingredients:

  • 1 tablespoon fresh lime juice
  • 4 large mint leaves
  • 2 teaspoons sugar
  • 1/2 cup brewed green tea, chilled
  • 1 ounce white rum

Preparation:

Muddle the lime juice, mint and sugar together in a Collins glass until the leaves bruise lightly and the flavours release. Add ice until glass is about 3/4 full and then pour in rum and green tea. Stir thoroughly.
