Tie Guan Yin - Top Fancy Oolong Tea

Oolong, meaning ‘black dragon’ falls between a green and a black tea on the oxidation scale. Its unbroken leaves unfurl during brewing to give a complex yet light orchid aroma with a fruity flavour and sweet lingering finish. Tie Guan Yin (Iron Goddess of Mercy) is an intensely floral Chinese Oolong.
PREPARATION
Place 3g (1tsp) of tea per person in a pot or cup infuser. Using boiling water to steep oolong tea can damage the leaves, so instead use water that is around 90°c (boiling water that has been allowed to cool for 1 minute). Brew for 2 - 4 minutes according to taste. The same leaves can be re-used for up to 3 infusions.
