Jasmine Silver Needle White Tea

Silver Needle (yin zhen) is a renowned white tea grown in Ning De in northern Fujian Province. Produced using the imperial plucking method - performed at dawn on just two days of the year - the tender leaves are intertwined with Jasmine blossom so that the delicate jasmine scent is absorbed by the tea.
Only the youngest tea shoots are used to make this tea, which is why it is so highly prized.
PREPARATION
Place 3g (2tsp) of tea per person in a pot or cup infuser. Using boiling water to steep white tea can damage the leaves, so instead use water that is around 75°c (boiling water that has been allowed to cool for 3 minutes). Brew for 2 - 5 minutes according to taste. The same leaves can be re-used for up to 3 infusions.
