Pai Mu Tan (White Peony)

Pai Mu Tan is a modern-style white tea, also known as Bai Mu Dan or White Peony.
Rather than using just the buds from the tea bush, Pai Mu Tan incorporates leaves into the mix, giving it a fuller flavour and a honey sweetness. Pai Mu Tan is from Fujian in China - a province famed for its white tea.
PREPARATION
Place 3g (2tsp) of tea per person in a pot or cup infuser. Using boiling water to steep white tea can damage the leaves, so instead use water that is around 75°c (boiling water that has been allowed to cool for 3 minutes). Brew for 2 - 5 minutes according to taste. The same leaves can be re-used for up to 3 infusions.
